The Huntman’s Not Your Average {Pumpkin} Chili

Chili is a go to in the home of the dwarves. It is cheap and easy to make, which is perfect for feeding eight mouths.  But after about three meals, we start to get a little tired of it.  I discovered the deliciousness that is pumpkin chili when I was pregnant with Alley Oop and craved all things pumpkin.  It is the perfect mix of spice and sweet, with a hint of pumpkin.

Instructions
  1. Brown the ground turkey in a large pot on medium heat until no longer pink.
  2. Once the ground turkey is browned, add chili pack and 1 1/4 cup of water. Cook on low heat until mixture is no longer watery.
  3. Add pumpkin, tomatoes, beans, Truvia, spices, and remaining 1/2 cup of water to the meat mixture. Stir.
  4. On low heat, let the soup simmer for 2 hours, adding water as needed. Stir occasionally.
  5. Before serving, adjust spices to preference. Serve with tortilla chips or corn bread, sour cream, and cheddar cheese.
